Winter black truffle – tartufo, in Italian – is a real treasure in the world of fine food and a miracle that nature makes happen. Truffles are formed below the soil close to a tree’s root systems, similar to how Porcini mushrooms live off a nearby tree’s nutrients.
Winter black truffle is black with shades from brown to purple to reddish. Its size varies from few cm in diameter to the size of an apple.
The word tartufo stems from the resemblance perceived in the Middle Ages between this underground fungus and tuff, the porous stone typical of Central Italy. The term then evolved into the Italian word tartufo.
Eataly: Established in 2007 by former electronics entrepreneur Oscar Farinetti with the aim of making high-quality Italian food available to everyone, at affordable prices and in an informal environment where people can shop, taste and learn.
